This is awesome. Makes about 6-8 searvings. The Walla Walla onions give it a lot of sweetness, that you would normally get from brown sugar. Tried it with ground turkey and it lacked body. Ground lean beef may be good too. Does not take long to prep and cook.
1.5 to 2.0 -lb ground pork
One large walla walla onion, diced fine
4 cloves of fresh garlic, minched
1 tablespoon chili power
1 teaspones each paprika, cumin, dried cilantro
.5 tabl spoon dried organo
1 can diced tomatoes (check for surgar), prefer roasted type, drain some of the juice off.
Kosher salt and ground pepper to taste
In a skillet, cook pork till lightly browned. Transfer to paper towel, drain fat but retain about a tablespoon in pan. Cook onions and garlic together until real soft. Add back pork. Add spices. Mix up real good. Let simmer 15 minutes stirring occasionally, and serve. As a condiment for the hot food lovers, sprinkle with "Pepper Plant" brand Habenero hot sauce.
