  • A new home favorite, Parm encrusted Stuffed Chicken

    Made this recipe for dinner last night and my girl friend said its the best chicken she has ever had, recipe as follows.


    2- Large Boneless Skinless Chicken breasts
    10 spears asparagus sauteed
    1/2 cup of Parmesan
    1-egg
    2oz Colby jack cheese
    water for eggwash


    Double butterfly the chicken breast, in the center of each place half of the asparagus and half the cheese. Roll the breasts up like a burrito. Eggwash the breasts and coat with Parmesan. Bake at 350 for 30 min or so, at the end if the parmesan isn't browned enough broil it til the desired level. heres a pic of what it looked like with some Mashed potatoes ( cauliflower Potatoes) total carbs if I am correct should be about 5 net carbs total.
