    This was from another website that I had saved. Can not vouch for the carb listing they have I did not go through to check. I also have not had the chance to try it since I am refusing to pay for the price they ask for the Atkins Bake mix. However there are recipes out there for bake mixes you make yourself. When I move on to OWL I will try them. Don't know right off if Atkins Bake Mix is induction friendly, let me check....Is it now called Quick Crusine Bake Mix, if so it has all phases listed as acceptable for. Happy eating.

    Southern Fried Chicken

    Ingredients:
    Chicken pieces (thighs, wings, legs...)
    1 cup Atkins Bake Mix
    1 teaspoon dried parsley
    1 teaspoon dried oregano
    1/2 teaspoon dried basil
    1/2 teaspoon garlic powder
    1 teaspoon salt
    2 teaspoons onion powder
    1/2 teaspoon paprika
    1 teaspoon black pepper
    1/2 cup heavy cream
    1/4 cup water
    1 egg, beaten

    Mix all dry ingredients together, set aside. Mix cream, water, and beaten egg in bowl. Dip each chicken piece into cream mixture, then coat chicken with dry mix. (Use a plastic shaker bag if you like.)

    Fill a skillet about halfway with light olive or grapeseed oil. Heat to medium-high heat (when water "pops" in the oil, it's ready.) Fry chicken without crowding. Use two skillets or do in two batches if necessary. (The oil will bubble up at first, then calm down as it cooks.)

    Turn down the heat to medium to allow chicken to cook thoroughly. Turn the chicken periodically to brown evenly.

    When golden brown, drain on paper towels and remove to serving plate. Enjoy!

    Servings depend on amount of chicken used. Less than 1 gram of carbs per chicken piece.

    Thank you everyone for all your suggestions. I think I have found a faux fried chicken recipe. Since I've just started the diet I'm going to post the recipe and if anyone thinks that it can NOT be used in the induction phase please respond. Thanks for everyones help. Here goes:

    1 whole chicken - cut up (or any parts you prefer)
    2 to 3 eggs beaten
    poultry seasoing (or any seasoning you prefer)
    salt and pepper to taste
    1 lg bag of pork rinds
    1 Large zip-lock bag

    Boil chicken till done. Beat eggs and add seasoning(s). Put pork rinds in zip lock bag and crush (not fine). Let chicken cool and dip into eggs, then place chicken in bag with pork rinds and shake. Place coated chicken on cookie sheet and bake at 375 until brown and crunchy.

    I have also considered frying either in butter or oil. Let me know what you all think. Thanks again for all the help everyone.

      AND ANOTHER...

       boneless chicken breasts
       ½ jar of Hellman’s mayo
       canola oil-very hot in skillet or other fryer
       large bag of pork skins (rinds)
       rosemary
       thyme
       pepper
       paprika
      ---------------------------------------------
      crush bag of pork rinds & combine with other ingredients
      dredge breasts thru mixture
      fry minimum 5 minutes each side

        you wouldn't believe how excited I was when I found this post, but unfortunately, i do not eat pork...is there another induction friendly option (since i can't eat the bake mix yet either) other than the pork rinds?

          Mix up some parmesan cheese and good seasons Italian dressing mix (dry). Dip your chicken in egg and then coat w/ the cheese mixture and fry or bake. It's pretty yummy!
