After each one of my 5 kids my MIL would bring over meals. My favorite was cabbage casserole. It was just like lasagna but instead of noodles there were cabbage and cooked barley. It was actually pretty healthy. Today I made a knock off.
I measured out 1 cup of shredded cabbage and steamed in microwave. I then browned 1 serving of ground beef. After both were cooked I combined and added 1/2 cup of vodka sauce. I found a natural vodka sauce at Meijer and it only has 2 net carbs per 1/2 cup. I cooked them together for awhile. I then added some mozz cheese on top and waited until it melted. Very good. I can honestly say this is my new favorite meal. Quick and easy. The next leftovers were even better!!!
