  • Avocado Crab Meat Soup.....

    Avocado and Crab Meat Soup recipe
    Ingredients:
    8 oz (one can) of crab meat.
    4 avocados, peeled and seeded.
    1 medium onion, finely chopped.
    4 cups of chicken stock.
    2 cups of heavy cream.
    4 tablespoons of butter.
    1 tablespoon of all-purpose flour.
    ½ teaspoon of garlic powder.
    Salt and pepper, to taste.

    Preparation Instructions:
    Mash together the avocados and crab meat.
    Sauté the chopped onion in the butter.
    Add the all-purpose flour, garlic powder and chicken stock, then whip until smooth.
    Add the avocado/ crab mixture to the liquid and simmer for twenty minutes.
    Add the cream and salt and pepper.

    Serve as desired...........

    Here is my question..
    this looks and sounds so yummy! But what about the flour???
    Is there anything i can substitute for that??

    More butter.

    Maybe some more cream.

    1 Tbs. flour isn't enough in the first place ... most of the thickening is coming from the butter and cream.

      This link gives you the instructions on thickening soups/sauces with egg yolks. How to Thicken Soups

      The addition of egg yolks to a soup thickens and also makes it much richer. For each cup of soup, you could add 1 egg yolk beaten with a tablespoon of cream or sherry. It is safest to temper the eggs by adding a little of the hot soup to the egg container, mixing it thoroughly, and then adding that mix to the soup. This will help keep the eggs from curdling (scrambling). You add eggs to a soup right when you are about to serve it, and at all costs, keep the soup from coming to a boil.
