  • atkins protein pizza

    hi there,

I posted this recipe somewhere else, and I thought I'll have it translated in English, not sure this kind of pizza has been made before though.
I am an italian, and , as such, I always longed for a crusty pizza, and just couldn't stand the cheese or cream-based crusts

ingredients for the crust: this crust contains around 15 total carbs
    50 grams of gluten
    40 grams of soy flour
10 grams of ground sesame seeds
    salt
    2 egg whites
    a sprinkle of olive oil
    100 ml of water
    Any topping of your choice

grind the sesame seeds in a food processor

    mix all the ingredients together

you can shape up your pizza with the help of a cake mould

pre-heat your oven at 170 degrees celsius and cook it until golden-brown on both sides

now it's time to put your toppings:

and once again in the oven till it's ready (just check when the mozzarella is melting and the crust becomes darker

50 grams of gluten are 5 carbs
40 grams of soy flour are 9 carbs
10 grams of sesame seeds...a little bit than 1 carb

You can look up in the USDA database how much a cup of something is in grams.

Also, the recipe is not acceptable on Induction, so you'll have to wait until later in OWL to try it.

Maybe you can post the conversion that you figured out. I am sure others would like to know. And yes the US is the volume place. Other places it is by weight.

It is a Rung 9 or maintance add it. It has flours like gluten in it.
            I have not tried it.

I have make the cauliflower crust a few times.

Isn't is strange how we buy our food by weight, then measure it by volume at home? I've always been annoyed when shopping for a recipe: I need 2 cups of crushed tomatoes (canned)...but the cans are marked in oz. How many cans do I need? And I'd guess (usually wrong).

Maybe I should move to Europe!

                      thanks for the conversion guys;9
healthiermenow: I put the dough on an oven tray, but I spread it using a cake mould (it'j just a metal ring)to give it a round shape. Then I take the ring out before I put it in the oven, 338 F, but I didn't count the minutes exactly; so just keep an eye on it till it becomes slightly brown on the surface: at this point I take the tray out, flip the crust over and spread the tomato juice on top with all the ingredients and back into the oven till the cheese melts.
I didn't use any baking powder: the egg whites will help it rise to give it a spongy texture, you may try to use the baking powder I think it will become even spongier.
Next time I'll use dry yeast for bread and tell you the result

Thanks for posting this maintenance pizza Rbrt... and with all the pics! I'm definitely gonna try it as I've yet to find a low carb pizza that really does it for me. I too live in Italy... I guess we're used to a different kind of pizza here.
