This recipe is really satisfying, and the technique I use really makes the yolks creamy, which is good, because I hate yolks!
Ingredients:
3 large eggs
2-3 T softened butter
2-3 T (or more) mayo, to taste (or if you're trying to increase fats!)
dash garlic salt
few twists of freshly ground black pepper
2 small celery ribs (or one large), diced small
Method:
Hard-boil eggs. While eggs are boiling, put butter in bottom of small bowl. When eggs are finished, peel while still hot and separate yolks from white, placing yolks into bowl with butter. Mash vigorously with fork, incorporating butter, until very creamy and there are few to no lumps. Add mayo and whip with fork until incorporated. Add garlic salt, pepper, and celery, mix. Add diced whites, and mix again.
I will sometimes add a bit of fresh garlic, or onion, and I put it in with the yolks to mash. The heat of the yolks seems to cook the garlic or onion a bit, and really releases the flavors.
