I made this last night for dinner - it was delicious! I set them in the oven at 350F instead of grilling (took about 7 minutes each side instead of 5). I also substituted fresh lemon juice and pepper for the lemon pepper after noticing that mine had sugar in it. Other options include adding salmon or crab and/or some leafy greens along with the cheese.
Stuffed Portobello Mushrooms
4 portabello mushrooms
1/4 cup olive oil
2 cloves garlic, minced
1/2-2/3 cup crumbled bleu cheese
1 teaspoon lemon pepper
1/4 cup chopped fresh basil
1. Remove stems from mushrooms and gently scrape away gills from underside.
2. Combine garlic and olive oil.
3. Brush on caps and set aside for 30 minutes.
4. Combine cheese, lemon pepper and basil and set aside.
5. Grill over medium heat top side of mushrooms up for about 5 minutes on warming rack of grill Turn mushrooms over and fill with cheese mixture.
6. Cover and grill about 5 minutes or until cheese is warmed through.
7. Serve whole.
Makes 4 servings.
