    White Cheese Sauce for Brocolli

    Melt some butter in a skillet over medium heat and toss in a Tbsp of minced garlic (I use the kind in a jar). Saute' this until it gets a little nutty in color and then add a little cream or half and half, salt, and freshly ground pepper to taste. Then take about a half oz of smoky cheddar cheese and stir it in until it is melted and the mixture lightly coats the back of a spoon. This is yummy and my non-dieting family enjoys it too!
