  • mushroom sauce

    I have another favorite recipe that I hope some people can find helpful. It is a mushroom cream sauce that is just divine. You may have to fiddle a little bit with the measurements because when I make it, I just eyeball it for the most part.

    Put a tablespoon or so of butter in a frying pan and melt. Add about a half cup of sliced mushrooms (and I like onion with it too but that is a personal preference!) and saute until they are soft. Pour in about a third of a cup of cream (and again, I just eyeball it) and continue heating. Keep a good eye on it though because if you let it be without stirring for too long, it will go from yum to yuck! The cream will start to bubble and it will thicken up. Season with salt and pepper to your tastes. I use it in omelettes or on top of grilled chicken. It is really good. I had chicken and fauxtatoes with this sauce over it. Probaby the best meal I have made myself since starting Atkins!

    I like to eye ball sauces as well. I make a similar sauce for steak. Before adding the cream add some beef broth and reduce it for a while. I also add some stone ground mustard and rosemary.

        :P mmmmmmmm both your sauces sound lovely,1 question : im in uk we use oxos (cubed beef broth) r they ok? any more sauce ideas? have u seen the 1 i posted its the same as yours in a way but i fry bacon 2 then wen all nice and crispy i add a tub of philidelphia cream cheese its gorgeous poured over steak v.thick and yummie.
