    They are amazing aren't they.!!!!!

I dropped 1/4cup of the splenda, and only used 1/2 a cup, but used 50g of butter, as i hadn't the foggiest idea what a "stick" was.!!!

They are amazing and have save me from skipping breakfasts on weekdays. They also make a nice pudding with a little whipped cream.!!!

I tried to make ones with 1/2 cup hazelnut davinci and 1/2 cocoa powder (unsweetened) and they came out of the over looking like something your labrador would leave behind in the park.!!! - the colour, the consistency, everything was just like a turd.!!!

Be warned....mine didn't explode though thankfuly.!!

          hi schaffy!

i really want to try this recipe!

can you give me an idea of how many muffins this recipe yields, and about what size? i have large, medium, and mini muffin size pans.

          thank you!

OK - I've got to ask because I just can't figure it out...what if I used SF raspberry jam (4T) instead of syrup. It has 5 carbs per tablespoon, and 0 fat, calories, sugar, etc. How will this affect the overall carb count on the muffin? And, my mix (which I followed exactly with the exception of cutting the Splenda by 1/4) did not make 12 muffins - it made 16! (I was using a 12 muffin pan, and they were 2/3 full) I also used paper in my tins, no problems with sticking (I think it was all that butter).
            Any thoughts?

If you use the jam it will no longer be induction friendly.

For some bizarre reason, I get a different amount every time...weird huh.?

Anywhere between eight and twelve in a medium sized tin, I think.

They have saved my life when it comes to breakfast....until I lost my job...,...

Then it was back to the eggs and bacon joy that is breakfast.!!

Now i alternate the two...on a day i have eggs and bacon, i have a muffin for pudding with some whipped cream...

They are good for keeping ya' regular...y'know...

anyhoo - hopefully i will get a new job soon.
                See ya'll later.

Re: Raspberry Flax Seed Meal Muffins

I tried these on the weekend and OH MY GOD are they great!
I subbed in a 1/2 cup of Atkins Maple Syrup instead of the raspberry syrup.
Just a tip for those who are using whole seeds and are having trouble with them floating; you have to grind them into a meal... I would use a food prcoessor.

Re: Raspberry Flax Seed Meal Muffins

Oh my...I made these just a little bit ago. And my are they GOOD! I used Davinci raspberry syrup. I also made up a small batch of 4 oz. cr cheese with enough splenda to sweeten it and when I put the muffin batter in the cups I put only 1/2 of the batter in, then a small dollop of cr. cheese mixture, and then the rest of the batter. I topped each one with a mixture of a small amount of flax and sugar mixed into enough melted butter to moisten. Then baked them. I am going to have to HIDE them from myself. They are still warm and very good!

Edit: For the Protein Powder I used Vanilla Flavored Soy Protein Isolate Powder.
