  • Raspberry Flax Seed Meal Muffins

    Raspberry Muffins
    3 eggs
    1 1/2 sticks butter melted
    1 c protein powder
    3/4 c splenda
    1 1/2 tsp baking powder
    3/8 tsp salt
    1/2 c water
    1/2 c rasberry syrup (like daVinci or torani)
    1 c flax seed meal

    prehead oven to 350. beat eggs and add melted butter. continue to beat. add (one by one) protein powder, splenda, baking powder, and salt. Beat well. stir in syrup, water and flax seeds. put in greased muffin tin and bake 25 minutes.

    2 grams of carbs/ muffin
    Very tasty with butter

    These muffins are the best yet! Tried 2 other recipes and will stick with this one! Have you tried other flavorings?

      Glad you enjoyed them! I had one for breakfast today myself.

      Nope, I haven't tried any other flavors yet. If you do, let me know. I have several other syrups at my place, vanilla, and english toffee but I am not so sure how they would taste!

        Carrie, do you know if you can substitute Atkins diet mix for the protein powder? Also, where can you find flax seed meal? Thanks so much, I'm looking forward to trying these.

          Lucinda, do you mean the Atkin's Bake mix?? I am just gonna assume you are for the purpose of responding Anyway, I hadn't thought about that. I suppose it wouldn't hurt to try! You might want to do a recheck on the carbs that way though and I can't vouch for how they'll taste with different ingredients.

          I get flax seed meal at my regular old grocery store. Some people have mentioned they found it in their health food aisles but in my store, it was by the regular old baking goods. The brand I have is Bob's Red Mill. A bag will last ya for a while. Right next to it was the protein powder stuff. The kind I have isn't flavored but I do know that at Wal-mart and other such stores they do carry flavored varieties.

            Carrie, this helps very much! I did mean Atkins Bake Mix. I'll check at Walmart for the Flax Seed Meal. I'll try it with the Bake Mix and let you know how it comes out.

              Carrie, just wanted to let you know I made the muffins and they are great. I've been having 2 for breakfast every morning (nice change from eggs). I did use protein powder (I found it at the health food store in bulk for a lot cheaper than I'd seen it anywhere else), and I had to use Atkins Strawberry syrup. They have also seemed to help keep me "regular", which I DESPERATELY needed! Thanks so much!!

                  LOVE THEM!!!!

                  I made them last night with Atkins Bake Mix and Strawberry SF Syrup. They were very nummy. I used a little less bake mix (3/4 cup I think) but they were scrumptious!!! Can't wait to try other flavors! I think I may have a new addiction!

                  Oh, and I made 12 muffins with this recipe!

                    I don't have any protein powder...but I do have something I got at the health food store called "soy protein isolate" powder.

                    Will this work? If not...any suggestions on a good lo carb protein powder?

                      NEW VARIATIONS!!!

                      Thanks for the recipe. I just made four additional types tonight!!!

                      I made one with no flavoring, just takes like bran, good as a dinner roll with cornbread type texture.

                      Made one with 2tsp banana extract - YUMMY

                      Made one with chopped up blueberrys - MMMMmmm

                      Made one with 2 tbs unsweetened coconut and 1 tbs coconut extract - YIKERS!!!

                      Oh, the man is going to love me tonight!! Especially since I made chicken cordon bleu that is the BESTEST!!!! Check out that recipe under chickent recipes.

                      The only thing I would say is that they were much moister when I made them with atkins bake mix and the SF syrup. But that may just because there was 1/2 cup of syrup instead of just 2 tbs of extract. Any one have any ideas to fix that without adding more carbs??

                        I tried this recipe yesterday and it was great, but I didn't have any flavoured syrups other than maple syrup, so I modified the recipe to 1/4 cup maple syrup and 1/4 cup water and added a little less than 1/2 cup of mixed fresh berries (rashberries, blackberries, and currents). Oh my, were these ever delicious...... I couln't believe it. After 2 months of denial. it was a little taste of heaven.

                              These muffins are awesome! has anyone tried freezing a batch of them? are they still scrumptiosly tasty when unthawed in the microwave?
