Raspberry Flax Seed Meal Muffins

    Schaffy,
    I made these and they are very good. I wanted to know the calorie count so I went to fitday and added everything in and then divided by 12 (makes 12 muffins) and I came up with 289 calories for each muffin and a little more than 3 carbs (3.16)
    This is the first time I have done a recipie on fitday so I'm really not sure if just entering all the ingredients in and then dividing is the way to get the calorie count? Do you have a calorie count for these?

        FLAX MUFFINS

        HI EVERYONE

        JUST WANTED TO LET YOU KNOW WHEN YOU BUY THE FLAX,AFTER YOU OPEN IT YOU DO NEED TO REFRIGERATE OR IT WILL GO BAD. i ACTUALLY FREEZE IT. THESE MUFFINS SOUND GREAT HOWEVER IS THERE ANYTHING ELSE I CAN USE IN PLACE OF THE SPLENDA? I USED THAT IN THE ZUCCHINI NUT BREAD AND DIDN'T LIKE THE TASTE. ANY SUGGESTIONS ARE WELCOMED. I HAVE BEEN ON ATKINS ABOUT 6 DAYS DON'T THINK I LOST ANYTHING YET. MAY NEED SOME HELP KEEPING ON TRACK. THANKS

          I made these the other day and they are SCRUMPTIOUS!

          Ate 2 right out of the oven with butter - Yum yum!

          Ate 2 the next morning with my eggs & bacon, even used it to scrape up the extra egg -- Very good!

          Fed one to my hubby, and he said "These are good" (of course I didn't tell him what they were made of).

          Also, these made a nice before bed snack with decaf tea.

          Filled me up and I slept all night!

          Thanks for the GREAT recipe and Great muffin!

              I JUST got home from my health food store, and don't feel like going back out in the cold, but I bought my flax meal and forgot my whey powder. I also don't have any Atkins bake mix or protein powder...is it ok to just make them without it?

                I would think that the protein powder is a "key" ingredient. It gives it the bread/muffin like feeling.

                    is the flaxseed meal supposed to float to the top? OMG I tried these...I followed the directions exactly...ewwww I didn't care for them at all. All the flaxseed rose to the top...they exploded......Does anyone know what could've went wrong?

                      I had this problem too, and I found by letting them sit for about 15 minutes and mixing very thoroughly, the problem was solved.

                      I also changed to newer nonstick muffin tins so I didn't have to grease them, and that seemed to help.

                          The Torani syrup O found has 16g carbs per serving (1 oz). Is this whay everyone else is using?

                            I cut the flax meal by 1/4 cup and used almond flour/meal instead of the protein. Mine didn't separate and had a very nice bread consistency. I also decreased the splenda and butter though. I just tried to get it the consistency I usually make my banana nut breads (non Atkin's bread).

                              I tried this using a splenda blueberry syrup, and omitted the protein powder. maybe that was a mistake! the center of them was still moist, I didn't want to leave them in longer or else they would burn. Does the protein powder make that much difference?

                                Well, there are only 2.75 cups of dry ingredients in this recipe (the protein powder, the flaxmeal, and the sugar), so if you eliminate 1 whole cup of dry ingredients (the protein powder), then yeah, you're going to get a soggy result. If you're not on induction, try lainey's idea of replacing the protein powder with almond meal (available at Trader Joe's).
