    Flaxcakes

    1/2 cup flax meal
    2 eggs
    3 tbsp cream
    3 tbsp sour cream
    1 tbsp splenda
    dash nutmeg
    dash cinnamon
    1/4 tsp baking powder

    whisk all together until smooth. mix will be thick but still very pourable. add water to thin, or flax seed and sour cream to thicken if necessary. Allow to sit for 10 minutes to thicken and sour. Preheat griddle to 325, or put over medium high heat. Spray with cooking spray and drop by 1/4 cupful. cook 4 minutes, flip, and cook 4 minutes more. DON'T FLIP TOO EARLY OR THEY FALL APART!

    Makes 2 servings of 2-3 cakes each.
    1 serving (2 cakes) = 4.5 carbs

    Flax meal

    I am trying to find different things to eat and i was wondering what is flax meal you see i come from England and nearly every receipe i look at we can't get over here and i don't but off the internet.
    Big and want to loose weight

      Flax meal is just ground up flax seeds. I haven't ever been to England so I can't help ya much if they call it something else or where you would find it. Anyone from England out there have luck finding Flax seeds???

        I blend the flax seeds

        I just put on my blender as a substitute flax meal, turn out great. yummy

            I make them the same recipe minus the sour cream and they are WONDERFUL!!! I mix a little melted cream cheese and splenda and spread on top or with no carb syrup. YUMMY!

              Tried these this morning and burned the heck out of them! Black on the outside, still raw in the middle. *shudder* Was cooking them on the stovetop at about 6.5 on the dial with a teflon pan. Anyone have any suggestions?

                try lowering your setting and cooking them longer and/or put the lid on to "bake" them as they brown on the bottom. Your burners may not be the same temp as the posters.

                    I made them today for Lunch and they are yummy----I had them with Atkins sugar free syrup....must try them, you will love them.

                        Made these this morning, they were pretty good, but had sort of a strange consistancy and aftertaste to them, kind of sour. Has anyone tried variations of this that make them taste more like pancakes? Maybe cut out the splenda and sour cream and add some psyllum and baking powder?

                        I'm no cooking expert so I don't really know enough to experiment with these things. I'd go through a whole bag of meal trying to figure it out :P

                          I am one of the splenda challenged members of the board and I don't use it at all in mine. I also leave out the spices.
                          It does have baking powder in it. did you miss the 1/4 teaspoon of baking powder?
                          I only make as many servings as are going to be eaten at that meal so I'm always changing the mix a bit. If you do 1/4 cup of flax seed meal mixed with 1/4 t of baking powder added to 1T of cream, 1Tsour cream and 1T oil mixed with the 1egg you will get a more pancake type result. let it sit a few minutes for the flax to absorb the moisture. divie it into 3 small cakes in the greased pan on med and cover it. On my stove it takes 2 min to brown and set. flip like a pancake and brown.

                          You need some acid in any baking powder or soda recipe for the chemical reaction to occur to get them to rise. You could use a teaspoon of vinegar if you wanted instead.

                            ahhh crap! I did miss the baking powder lol. Maybe I'll try leaving the splenda out next time too. It really didn't have artificial sweetner aftertaste though.
