    2 eggs
    3T unsweetened vanilla soy milk (I used 2T cream with 1T water)
    1T soy flour or atkins bake mix (I used 1T soy protein isolate)
    1t splenda
    1/4t vanilla extract (I might try adding lemon extract next time for lemon pancakes)
    add cinnamon if you like

    Mix the eggs, milk, splenda and vanilla thouroughly. Add the
    flour and any cinnamon. Pour onto hot buttery
    pan and cook just like pancakes.

    Around 4g net carbs in entire recipe.
    I think this is OK for induction...it better be cause I just ate it!

    I just made these, but instead of soy milk I used heavy cream and instead of vanilla extract and splenda I used Atkins Sugar Free vanilla syrup. And I did put cinnamon on top. WOW!! YUMMY!!
