    I just saw this on the LowCarbLuxury magazine website--it sounds pretty darned good!



    Rosy Radish Home Fries

    If you can get past the pink color, these taste amazingly like fried potatoes.

    16 ounces radishes, washed, dried and trimmed
    (I bought a bag of already washed radishes)
    1 small onion, diced (2.5 ounces)
    2 slices bacon, lightly browned and diced
    2 tablespoons butter
    1 tablespoon cooking oil
    Salt and pepper, to taste

    Quarter the smaller radishes and cut any larger ones into eighths. Heat the butter in skillet that you browned the bacon in, mixing the melted butter with the bacon grease. Add the radishes and onions.

    Cover pan and turn heat to low. Allow to cook covered for 10 minutes.

    Uncover. Turn heat to medium, add bacon, and cook until nicely browned, stirring occasionally. Season with salt and pepper. Makes 4 servings.

    Do radish's get soft?

      You know, I've never cooked them--but alot of folks on the board do and they say that they are really delicious cooked--sorry I don't know the answer to your question--I might just pick some up at the store on my way home from work and try a small batch of them to see if i like it -if I do, I'll let you know!

          I too would be interested in the results. When you think about, a radish is similar in consistency with a potato. It could be might-t-fine. Let us know. I don't normally buy radishes, but might have to give this a try.

            I've made these and they turned out pretty good. Maybe I didn't cut the radishes small enough, but I cooked mine a good 20 minutes covered before they got soft. The onions and bacon really help make them taste like homefries. I used the leftovers the next day and cooked them with scrambled eggs sort of like a frittata.

              Finally bought some yesterday.
              Do you peel them? Or leave the skin on?

              I wonder if you boil them like red skinned potatoes and smash them up?

                I didn't peel mine to fry them. Someone in another thread, sorry, I don't remember who, talked about boiling them first to get rid of the heat and even uses them to make "potato" salad. I'm going to try that one.

                  for frying I don't peel them, and think they are terrific, and did not even have any bacon, but did add thin slices of onion at the end.. yum!

                  my complaint with using them in potato salad, even if you let them drain 2 whole hours, the boiled radish holds a lot of water, so when you bit it seems so juicy... just not quite right. The flavor was excellent otherwise, made this tonight.

                    what about mashing them?
                    I had them fried tonight, and DH took them right off my plate.

                      I printed off the recipe yesterday, and when I was working in the evening my GF stumbled across it.

                      When I got home from work she had made it for me. But instead of using bacon she used sausages. Very nice indeed, althouth they didnt really taste like home fries to me. It reminded me really of a casserole type dish really.

                      Will definitely be having it again.

                        I do homefries using turnips.

                        The night before, I boil the turnip whole, not peeled because peeling them before boiling makes them soggy. Anyhow, I boil them until they are tender, then I stop the cooking by running cold water over them. I let them cool completely. Then toss them in the frig. In the morning, I peel and slice the turnip into chunks.

                        Melt butter or oil in a skillet and fry the turnips over medium heat until golden on all sides. I add salt, pepper and about 1/4 cup of coarsely chopped onion. I cook the mix until the onion is soft. Then I sprinkle on about 1/4 teaspoon of cayenne pepper, mix it in and serve.

                        Whatever is leftover, I refrigerate and use in an omelette the next morning or eat it as a side dish for supper.

                        Kolhrabi bulbs work well too.
