    I was watching Good Eats http://www.foodnetwork.com/food/show..._40610,00.html last night and their was an episode dedicated to avocado recipes. Needless to say I love avocados and Alton Brown, so I was entraced. Here's my favorite

    Avocado Compound Butter

    6 ounces ripe avocado meat, approximately 2 small avocados
    1 tablespoon freshly squeezed lemon juice
    2 ounces unsalted butter, softened
    1 garlic clove, minced
    1 tablespoon freshly chopped cilantro leaves
    2 teaspoons ground cumin
    Kosher salt and freshly ground black pepper


    Peel and pit the avocados. Place all ingredients into the bowl of a food processor and process until well combined. Place mixture onto a sheet of parchment paper and shape into a log. Place in the refrigerator for 3 to 4 hours. Slice and serve with grilled fish or chicken.

            Yes, I have! And Shrimp salad, and tuna salad as well! I like avocados just by themselves with a little lime juice and salt and pepper too! I haven't seen any decent ones around here in a long time! I sure do miss Hawaii, my friends would bring me avocados by the grocery bag full from the tree in their front yard....sigh, those were the days.

                I love avacado and cheddar omlette, with a tablespoon of low-carb ketchup. Too yummy!!
                What would we do without it?

                  I'd never liked avacado (guacamole) before switching over completely and letting my preconceived guards down to this new way of life. Now that I am open to trying new foods, I've discovered what a treat avacados are - YUMMY!! I've been trying to be creative in the kitchen - and came up with a yummy avacado dip - I use it in omelets, or on fried cheese crisps for a snack. I use 1 1/2 ripe avacados - (smooshed) and add 3 tbps of mayonaise, 3 tbsp of sour cream - 1/2 small onion chopped - like a 1/2 - 1tsp of lemon juice, a little salt and pepper, and 2 tbsp of dry Knorr Vegetable Soup mix (the kind used for making spinach dip and stuff) Anyway - I mix everything together, and let it set for a little while in the refridgerator -- YUMMY-- I only use like 1 to 2 tbsp at a time and count this as 2-4 carbs per serving.

                    mmm avocado... they are edible heaven.

                    Crab salad with avocado? Do you mean a lettuce salad with crab and some diced avocado? Or are we talking crab meat, mayo, and diced avocado?

                    Inquiring minds want to know!
                    No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                      Oh Lord, you ladies have hit on one of my top 3 favorite foods!
                      #1 Avocados - Had to be an avocado tree, not an apple tree that Eve ate from
                      #1 Tomatoes - home grown, cherry, or heirloom of any kind
                      #1 Main Lobster full of tomaly - I don't care if it is a sea bug - Dr. Atkins says I can have it!!

                      I alwys peel and eat them before I can make something from them...avocados, that is. Speaking of crab stuffed....yeahhhhhhhhhh crab, green onion minced, lemon or lime juice and a little mayo, piled on an avocado half!!! SMACK Even add some whole roasted garlic cloves as a side dish!!! YUMMMMM

                        I missed that one, but I love Good Eats. Its a really interesting show. I think my favorite cook is Paula, but nothing she makes or I should say very little she makes is low carb or even low carb fixable.
