  • You Won't Believe It's Not French Toast (Pork Rind Recipe)

    Ingredients:
    1/2 of a 3-oz bag of unflavored pork rinds
    2 eggs
    1/4 cup heavy cream
    3 pkts. Splenda
    1/2 teaspoon cinnamon
    1/2 teaspoon egg nog extract (optional) ( I used vanilla)




    How to Prepare:

    Crumble pork rinds until they resemble bread crumbs.( I used my food processor) Set aside


    Beat eggs well and then mix with the remaining ingredients and beat again. Add crushed pork rinds to the egg/cream mixture and allow to sit for 5 minutes. Mixture will thicken to a "gloppy" phase.

    Meanwhile, heat skillet or griddle with butter or oil, and when hot, fry pancake style until golden brown on both sides.Serve with your favorite low-carb syrup.

    This recipe came off another site, so not sure who to give proper credit to. A nice change from eggs.

        This is WONDERFUL!!! It looks like a pancake and tastes like custardy french toast. YUM!!!!! My daughter made it and it is EASY.

          Thaat sounds YUMMY! Since I don't like syrup, will it taste alright with some butter? And, is it safe for induction?

            It is induction legal, but if you eat the entire batch, you'll have used up your sweetener and cream allottment for the day.

            Carb Count:

            Pork rinds = O
            2 eggs = 1
            heavy cream= 2
            cinnamon= 1
            vanilla= 0
            splenda= 3

            Total is 7 carbs - 1 fiber = 6 grams for the whole batch.

            - It's really filling too.

              French Toast

              This is the best thing I've made since trying several recipes. I'll never buy "boxed" low carb pancake mix again. This was MUCH better. When I crushed up the amount of pork rinds Brook said, it came out to about one cup. That must have been about right because they cooked up really well. I first tasted them without the syrup and they were good. I put a little syrup on them and they were fantastic. You'd never know you were eating pork rinds. This one definitely gets a thumbs up from me!! It's very easy and is a great change from eggs and bacon for breakfast. I made 4 "pieces" that were approx. 3"-4" inches in diameter. I am going to put the other pieces in a plastic bag in the refrigerator and heat them up tomorrow morning. Hopefully they'll be ok reheated. We'll know tomorrow. Thanks, Brook!

                Can I use the Atkins SF Vanilla syrup instead of Splenda and vanilla extract?

                  By the way, I've heard that if you leave the cinnamon and clove out and use less splenda, you can add mrs dash or whatever spices you like and use this recipe as a sort of flatbread.

                      how much does this make? you say if you eat the whole thing it's your sweetner and cream for the day, can you give me an idea, is this enough for more than one meal?

                        these are SOOOOOO good!! I modified the recipe and added another egg. I like to have 3 eggs every morning after my morning workout, as I'm doing some heavy free weight work and the protein helps a lot. But the 3 scrambled and 3 egg omlettes are getting boring. These are just the thing the Dr. ordered. Anyhow, the recipe with an added egg makes the 'batter' a bit thinner, but they still cook up as delicious Also, I've taken to grinding up a whole big bag of pork rinds at a time and storing in a ziplock bag. It looks like the amount in the recipe ends up being somewhere between 3/4 and 1 cup depending on how fine you grind them. Anyhow, I am sure I will never use the Ketogenics pancake mix again.... bleck

                          I made these this weekend, they were so awesome!! I even fooled my 10 year old into thinking they were regular french toast. Also, I made the batch and the remainder I put in a microwavable dish and put in the fridge till the next day. Next day, the mixture looked as if it had thickened, I heated up in the micowave for 15 sec to make it runny again before cooking in a skillet of butter. Tasted just as good the second day! Thanks Brook...

                              Do you know what the cup measurement is for the pork rinds? I have a bag where the rinds are crushed and some are whole. I'd like to use the crushed ones for this tomorrow but I don't know a cup measurement.
