    Chocolate Cappuccino Muffins


    1 cup almonds
    1 cup Atkins Bake Mix
    1/2 teaspoon baking powder
    1 1/2 sticks butter at room temperature
    1/2 cup splenda
    2 scoops cappuccino shake mix
    3 eggs
    1 cup flax meal
    1/2 cup water
    1/2 cup Atkins Choc Syrup

    Heat oven to 350 degrees F. Spray muffin tins with cooking spray. Process almonds in a food processor until finely ground. Add bake mix, flax meal and baking powder.......till combined.
    In a large bowl, beat butter and splenda until fluffy. Beat in shake mix, add eggs one at a time. Add shake mix and rest of iongredients. Mix in almond mixture with spatula.
    Bake 20 minutes.
