  • Poultry Spice Rub

    I was watching "Ham on the Street" on Food Network and he had a great spice rub recipe. The entire recipe is beer can chicken, which I'm going to post in the main dish forum.

    Spice Rub:
    2 tablespoons garlic powder
    1 tablespoon ground cumin
    1 tablespoon ground coriander
    1 tablespoon paprika
    1 tablespoon kosher salt
    1 tablespoon freshly ground black pepper
    1 teaspoon cayenne pepper
    1/2 cup extra-virgin olive oil
    1 lemon, zested
    1 (3 1/2 to 4-pound) chicken

    Mix the ingredients for the Spice Rub until they are well blended. (This will keep, covered, in the refrigerator for 1 week.) Rub it all over the chicken, inside and out.

    That sounds really yummy. You could even mix the dry ingredients ahead of time and then mix them in with the olive oil and lemon right before you want to use it! I'm a big fan of "prepping" - getting things ready so I can just grab them when I feel like cooking with them.
