Wasabi mayonnaise is an excellent condiment for a thick juicy tuna steak seared in sesame oil. It is also delicious with other meats and fish.
1 tbsp wasabi powder, mixed with water to the consistency of deli mustard. You may increase or decrease this quantity to taste.
1/2 cup homemade mayonnaise (I use the simplistic version with just a lemon juice acidulated egg yolk and oil; other people may prefer to coddle the mayonnaise using the recipe given a few threads earlier on this board for safety)
Combine the mustard with the mayonnaise and beat thoroughly. Taste and adjust proportions as needed. Do not add wasabi powder directly to the mayonnaise; always mix it with water first, or else the result will be gritty.
Garlic aioli mayonnaise
1 roasted head of garlic (slice off the top, drizzle with olive oil and roast slowly at 350F until cloves are soft and tender)
1/2 cup homemade mayonnaise - you may wish to add a clove of fresh crushed garlic to the egg yolk while making the mayonnaise for this version.
Peel and mash the roasted garlic cloves. Combine ingredients thoroughly, adjust quantity of garlic to taste. An excellent condiment with roast beef or salmon.
