Well, my post doesn't seem to be showing - perhaps it got lost in the lost posts? So here we go again. I'll see if I can remember the recipe!

2 cups of lightly cooked cauliflower, broken into smallish florets
4 oz or so pancetta, diced and sauted until starting to crisp up
Cream cheese/garlic roule/Philadelphia
Cheddar cheese [grated]
Parmesan cheese [grated]
Seasoning
Mix cauliflower with the soft cheese and most of the pancetta. I tried a mixture of garlic roule and Philadelphia which worked very well. Season to taste. Spread over the base of a shallow ovenproof dish.
Top with grated cheddar and parmesan, and remaining pancetta.
Cook in a hot oven until cheese starts to brown and crisp at the edge.
Approx. 9 carbs. Not induction-friendly due to the two cups of cauliflower.

Can anyone guess that I love cheese? This was supposed to be a substitute for 'real' cauliflower cheese, but it actually tastes better than the real thing. I had it as a main course, but you could make half the amount and have it as side dish [which would also make it OK for induction!]
