    1st one of my favs (I am sure these have a name somewhere, but I don't know them)

    Get a nice cobalt blue or bright yellow plate - hehehe colors make it better for me

    thick slice vine ripened heirloom tomatoes, or your favorite. Use cherry cut in half if you can't get really good quality tomatoes

    1/4 in slices of high quality mozzerella cheese (buffalo milk Italian if possible)

    a good amount of bresh basil cut in thin strips

    drizzle over a high quality extra virgin olive oil...I like peppered oil for this

    arrange on the plate any way you like, is also good with capers wrapped in anchovie fillets

    2nd a colorful dish for the eyes
    Char, peel and seed yellow, orange and red bell peppers. Cut into strips
    arrange like a wagon wheel on a bright blue, green or purple plate with tips touching the outside of plate

    In between strips put boiled quail eggs cut inhalf and still in shell, or put boiled goose or duck eggs shelled and cut in wedges in between

    In the center of the plate put oil cured black olives, or kalamata olives, or any type of black olive you like

    This is an amazingly striking dish to be so simple. I did it once with caviar in the center instead of olives.
