This is very good with ground beef, as a 'pizza type thing' base for whatever and I've also added chilli and had it with turkey or chicken.
Basically it uses a lot of veg, which adds additional bulk and flavour and pads out the tomato very effectively. It freezes very well.
Ingredients
8 medium sized mushrooms
1 small onion
2 medium sticks celery
1/2 a sweet pepper
1 cup cubed turnip (about 7 oz)
3 cloves garlic
2 cups canned tomato (I'm not good with cups, but the amount used was 21 carbs)
1 cup water
2 tablespoons Olive Oil
4 oz hard parmesan
About 10 leaves of fresh basil
Salt and pepper
Heat the olive oil in a large frying pan. Chop the first five ingredients and add to pan. Stir over a fairly high heat until onions just begin to brown - about 5-10 mins.
Crush or chop garlic and add to pan, cook about a minute more.
Add the canned tomatos and the water, mix well in and heat until the toamato/water starts to bubble. The turn the heat as low as it will go, cover the pan and leave to simmer very gently for about 2-3 hours.
Now put everything into a blender and zap it until it is smooth. (it's just as good unblended, so you could have it that way too.)
Put it all back into the pan, add the grated parmesan and stir until it has dissolved into the sauce. Stir though the chopped basil. Season to taste with salt and pepper.
It's done.
You end up with about 4 cups of sauce, quite thick. A half cup per person with ground beef, chicken or whatever is an ample portion. So this recipe makes 8 portions in total.
