    This isn't a recipe but just an idea that works really well.

    You know those large portobello mushrooms that are the size of a roll?
    Try using them in place of bread!
    Since they are so big, they work best for "Open Faced" sandwiches otherwise it'd be very hard to eat, lol.
    And since the underside with the gills is kind of scooped out, it fits all the filling for your sandwich with out spilling any!

    My favorite is,
    Turkey bacon on the bottom (no read meat or pork for me)
    a turkey burger, topped with ranch and a slice of cheddar cheese and pepper jack cheese on the top.

    I bet this counts for one cup of vegetables

    I looked it up and for 100g of portabello mushrooms, it is 5.1g carbohydrate with 1.5g fiber so 3.6g net carbs! =)
