Crock Pot Chicken

summer sausage, sliced very thin
8-10 boneless chicken breasts
8-10 slices of bacon
1/2 can nacho cheese soup
1/4 c. sour cream
Line bottom of crock with slices of summer sausage. Wrap a slice of bacon around each chicken breast and place on top of the sausage. Mix soup and sour cream, adding water if it is too thick. Pour over chicken. Cook 3-4 hours on High. A total of 17 carbs.
Crock Pot Spicy Pork Steaks

4-6 pork chops or steaks
2 slices onion, chopped
2 T. green pepper, sliced
Black pepper to taste
1 T. brown Sugar Twin
2 tsp. dark molasses
1/2 T. cider vinegar
2 tsp. Lea & Perrin Worcestershire sauce
8 oz. can tomato sauce
Brown meat in skillet, and then place in crock-pot. Top with rest of ingredients, pouring tomato sauce over all. Cover and cook on high 4-5 hr.
Most of the carbs are in the tomato sauce and the molasses, but you don't eat much of the sauce, unless you want to thicken it and serve over cooked cabbage or low carb noodles. (35 carbs total in recipe)
Hot Crock Pot Chicken

4 c. cubed, cooked chicken or turkey
1 small onion, chopped
1/2 c. chopped celery
1 c. mayonnaise
1/2 c. American cheese, chopped
Combine all ingredients in crock-pot and cook on High 2-3 hr.
Total counts (using boneless, skinless chicken breasts): Cal 2867; Carbs 17g; Fiber 2g; Fat 227g; Protein 179g
Sweet and Sour Beef

2 lb. stew meat
2-3 T. oat flour
1 tsp. salt
1/4 tsp. black pepper
1 T. butter
1 T. olive oil
1 slice onion, chopped
1/2 c. sugar-free ketchup
2 T. brown Sugar Twin
2 T. Splenda
1/4 c. red wine vinegar
1 T. Worcestershire sauce (I prefer Lea & Perrin)
1 c. water
salt or pepper to taste
Mix flour, salt and pepper. Sprinkle over meat. Brown in the butter and olive oil in a skillet. Place the browned meat in the crock pot, along with the onion. Mix the rest of the ingredients and pour over the meat. Cook 6-8 hr. on Low. May add vegetables for a different stew.
Corned Beef Dinner

In a crock pot, chunk up one of those Corned Beef Briskets (mine has all the seasonings already added, and I got it on sale last week so it was $4.00 for about 8# of meat, and has no carbs). Chunk up 1 medium cabbage, 2 medium onions, 10-12 baby carrots (for the others, adds negligible carbs to the mix if you don't eat them!), fill 2/3 of the way with water. Turn on the crock pot and leave it alone all day.
Dinner at dinner time! The meat is tender, nicely seasoned and yummy, esp. when dipped in mustard. I do potatoes (separate) for the rest of the family, and just eat lots of cabbage and meat myself.
