  • Harvest Grain Nutty Pancakes

    This is a modification of the Pork Rind Frech Toast that Brook posted here that I created this morning. Basically there are just a few added ingredients.

    Ingredients:
    1/2 of a 3-oz bag of unflavored pork rinds
    3 eggs
    1/4 cup heavy cream
    3 pkts. Splenda
    1/2 teaspoon cinnamon
    1/4 teaspoon vanilla extract
    1/4 teaspoon almond extract
    2 tbsp. Flaxseed meal

    How to Prepare:

    Crumble pork rinds until they resemble bread crumbs.( I used my food processor) Set aside

    Beat eggs well and then mix with the remaining ingredients and beat again. Add crushed pork rinds to the egg/cream mixture and allow to sit for 5 minutes. Mixture will thicken to a "gloppy" phase.

    Meanwhile, heat skillet or griddle with butter or oil, and when hot, fry pancake style until golden brown on both sides.

    Carb count:
    Eggs - 2
    Splenda - 3
    Heavy Cream - 2
    Cinnamon, vanilla and almond - 1
    Flaxseed meal - 4

    Total 12 grams
    Fiber 6 grams
    Net carbs 6 grams
