    2Big..You mentioed that the muffins rise even more if nuked..Do you mean nuking before baking or can i bake them in the microwave? I dont have an oven that works so it would be great if i could bake them in my microwave..Maybe just use paper cups without the tin or find glass bakeware?

          I'm not 2big, but you nuke them instead of baking them in a conventional oven. If you have 1 cup microwave safe containers, you can use them. I don't know how long you can cook them because each microwave is different. But do a "test" muffin, and check it every minute of so by sticking a toothpick into the muffin. If the toothpick comes out clean (meaning, no gooey batter), then the muffin is most likely cooked.

          As for whey protein powder, you can find that in health food stores, some grocery stores (check the natural/health foods aisle) and even on line. I haven't ordered any but several folks here get their whey powder from allthewhey.com.

            WOW! Not bad!! After experimenting with flax meal ceral, and HATED IT, I gave this recipie a whirl today. These were great... I added 1/3 C. splenda to my recipie and 2 teaspoons of flavoring instead of 1. I must say, this is a refreshing change from meat and veggies!

              I am unclear, deos eat muffin have 8 gr of carbs or the whole recipe???

                I know this recipe was posted a while ago, so I hope you see my reply. I want to make these muffins, but I need to know how many carbs are in them. I'm getting way more than 8 carbs total for the whole recipe.

                I get 18.72 carbs just in 3 cups of flaxmeal alone...(.39 x 48TB in 3 cups)

                Also, my designer weigh is 2carbs/scoopp and each scoop is about 1/4 of a cup so that comes out to 8 carbs for 1 cup of Designer Whey.

                Is the flaxmeal not counted in the total carb count, or is my whey protein higher in carbs than yours?

                I'm coming out with 2.5 carbs/muffin.....Is this right???

                  hahaha......you put the nutritional information for ONE muffin, not all 12!!

                  hehehe well now that makes sense. ~3 net carbs for 1 muffin.

                    I just made these and they're fantastic! I didn't have any whey, so I decided to be daring and use my nasty Atkins Chocolate Shake mix in its place (6 scoops). They were great and I was really pleased that I'm not going to have all that shake mix go to waste! :laughing

                      Dying to try

                      I am dying to try, but where the heck do I get teh flax seed meal and whey protein. Never bought these before, so what part of teh store are they in??

                        I didnt fully understand you count.. was that 8 to 10 carbs per muffin?

                          My flax seed is by Hodgon's Mill. It lists 4 carbs per 2 tbsp and 4 grams fiber per tbsp.

                          Carb Solutions vanilla shake mix, 2 carbs per 1/3 cup, so 6 for the cup.

                          0.6 for the egg.

                          Oil has no carbs, 1tsp cinnamon has 0.6

                          baking powder 4.48 two teaspoons from Fitday

                          So. 12 muffins of my recipe comes to 0.97 "effective" carbs according to Atkins book.

                          I am going to try and add cocoa powder the next time with some liquid splenda, and see how that works.

                            oh my gosh! I don't know if you're still around, Cadillac (this post was made in 2003 or something, by the looks of it! ) but I just had to comment:

                              sorry guys you posted this stuff while I wasn't part of this board any more Megs answered the nuking question. If you use plain protein powder no sweetner or spices you have an induction legal bread or you can *** herbs and spices and have italian or farlic type savory bread too. I love making garkic and herb ones to replace the garlic bread when I fix italian foods.

                              flax meal bags and boxes use the FDA nutritional rules and rounding to make it appear they have 0 carbs but it actually has .78 net carbs per 2T there are 4T in each muffin along with 1/12 of a cup of your proteinpowder or shake mix, 1/12th of the amount of baking powder you use (I have a cornstarchless bakingpowder so I get even less carbs then listed), 1/12th of an egg and then 1/12th of whatever sweetener and flavoring you use.

                              Some folks say they are too dry and add 1/4 cup more water. I had assumed most folk would be using Davinci syrups as their flavoring and sweeteners so they wouldn't want to add more water, but if you don't you can. rememeber if you use Spenda packets or measure you have to add the carbs from that too, I don't sweeten mine but once you have been on Atkins for a while and not using sweeteners you will find things have a natural sweetness to then like veggies and meats, If you are a sweetener junkie then they willl need sweetner.
