    Naja's Psyllium Pancakes

    Psyllium Pancakes

    The basic recipe is Induction legal

    Basic recipe:

    2 eggs
    2 teaspoons psyllium husk (slightly rounded)
    1 tbsp flax seed (rounded)
    1/2 teaspoon baking powder
    1/2 teaspoon Splenda
    2 tbsp heavy cream

    Optional additions:
    1/4 tsp cinnamon and a few drops of vanilla extract are also quite nice.

    Makes 2 big pancakes, with just under 4 net carbs total, and is really "stick to your ribs" filling

    This was posted on ADBB when I was a newbie. Unfortunately, it was lost during one of the Board upgrades. Luckily, I had the recipe saved on some forgotten file on my computer.

    I've never made these pancakes, but I do remember Naja stating that they were a dead-ringer for the regular kind. I presume you cook them on a griddle or in a buttered skillet as you would a regular pancake. Note: this is an American style pancake, not the UK style pancake.

    Another thought, I presume that the psyllium husk is the unflavored, plain psyllium husk....not the pink lemonade, orange or berry flavored kind.

      And lastly, I don't know if Naja used the coarse texture or smooth texture psyllium. Feel free to experiment with both.
