  • Recipe for Meatballs?

    I LOVE meatballs and would really like some recipes. I am in my 7th week but still trying to stay with induction. Any recipes? Thanks!!

    it's not actually a recipe, but i use flax seeds in my meatballs.

      I made some the other night becaue I was making spaghetti for my family, which of course, I couldn't eat. I made them up, so the carbs might vary depending on what you use. I know the count is low.

      1 lb lean ground beef
      1/2 red bell pepper, finely chopped
      1 green onion, chopped
      1 1/2 tsp. fresh cilantro, chopped
      Italian spices to tase
      Dash of worchestershire sauce
      Mix all together, form meatballs. I baked mine on a broiler pan for 15-20 minutes at 350 degrees.

        I use 1 portion ground beef and about 1/3 portion of italian sausage, garlic powder, onion powder, black pepper and parmesan cheese. Pan fry in a non-stick or with a little olive oil. I was going to try baking them too, but havn't gotten around to it.

          I don't know about meatballs, but tonight I made Chicken parmesan for my daugher's burthday, and I experimented with two pieces of chicken. I used pork rinds and parmesan instead of bread crumbs and parmesan. I can tell you that the next time I make this I will not use bread crumbs at all. I could not tell one bit of difference. The pasta sauce had a bit more carbs than I would like, but still only 5 net carbs for the 1/2 cup. We used Atkins spaghettie for our pasta. It was ok, better with the sauce and cheese, but a bit tough. I wonder if there is a way to soften it up any?

          I think that meatballs would probably turn out just as good.

            There are a couple of meatball recipes in our cook book. If you like one that is there besure to rate it for us.

              Hi,

              Meatballs are very easy. Follow your usual recipe if you have one. Just eliminate anything that would not be induction safe and try to substitute it with induction safe items. (the main problem is the bread crumbs, I used crushed pork rinds instead and you could not taste the difference.)

              Here You Go:

              1lb Ground Beef or 1lb meatloaf mix (beef, veal and pork)
              2 Eggs
              1/3 cup Parmesean cheese
              salt pepper (to taste)
              garlic (to taste)
              a sprinkle of dried parsley flakes
              1/2 cup crushed pork rinds
