For something really simple and induction friendly, I take chicken and drizzle it with olive or sesame oil and then sautee it with mushrooms, fresh rosemary, garlic, and onion. Among other combinations, I've also used spicy brown mustard, onion and mushroom. You can use just about anything and it comes out good, and you can turn it down low and let it take it's time if you have things to do while dinner is cooking. Another thing I'll do is to throw in a bunch of veggies, and then use the leftover ones for the next day. This way, they're full of flavor from simmering in the chicken and seasonings.

take chicken breast, cut in half lenght wise, pound until thin, season to taste, layer spinach, cheese, proscuito (or other spcied ham, or sliced meat your preference) Bake at 350* In saute pan, reduce 1cup heavy whipping cream, season. When reduced by 1/2, take chicken out of oven, and pour over chicken. Return to oven, and Bake untill chicken is done.

I put about 1/2 cup of Parmesean (fresh grated, not the canned powder) and mix it with 1 teaspoon of black pepper and spread it on a plate. Then I take 3 boneless, skinless chicken breasts and coat them lightly with the mixture on both sides. Bake at 350 until done. The parmesean and pepper add a nice crunch and flavor.
I often cook lots of chicken and increase the Parmesean and pepper to keep this chicken in the refrigerator for salads and snacks. My young son loves it!

okay, I have a great chicken rec. to try. Found the orig rec. on the frozen, skinless, chix breast bag and just made a few adjustments: ttl recipe: 1931 cals/124g fat/14carb-2fiber=12net carbs/176g protein ~divide by number of svgs~ (which depends on how hungry you are ) ... makes 6 'bundles'
SW CHICKEN BUNDLES
6 boneless, skinless chicken breasts
3oz pepper jack cheese, grated
3oz. cream cheese, softened (check pkgs-I've found a spread of carbs depending on brands)
6 slices of bacon (not thick cut)
salt and pepper to taste
1/3 c. Ranch dressing
1/3 c. mild picante (I make my own salsa w/ tomatoes, jalepeno, gr.pepper and gr. onion)
Pound the chicken until ~ 1/4" thick and season w/ salt + pepper
In sm. bowl, combine cheeses. Divide into 6 equal portions and roll into balls.
Fold one chicken breast around a cheese ball.
Cut a slice of bacon in half and cross over ~ use toothpics to secure around chicken (holding cheese inside)
Bake in 9x13 dish for 30 min at 350degrees. Turn oven to broil & broil 3-5 min or until bacon is browned.
Remove chicken from oven and toothpicks from chicken
Mix ranch dressing and salsa/picante tog. Pour mix in center of serving plate and place a piece of chix on top.
Voila!
Eat with side salad for refreshing meal. I usually only eat 1pc chicken if I'm eating salad too - that's 2carbs according to fitday! YUM!

I coat my chicken in parmesan cheese and then bake. Makes a nice 'crust'
Last night, I spooned a few tablespoons of a pizza sauce (of course check your label for carbs) over the chicken and then covered in cheese...I used parmesan and mozzerella...I crave italian food more than anything on this diet so that recipe helps.
Also you can melt a little butter to pour over your chicken and then coat with crushed pecans.
My husband did something similar to this for valentines day for me....instead of using regular chrushed pecans, he took them and put them in a pan with some butter and splenda and sort of candies the nuts...then coated the chicken and served it over a small spinach salad. YUM!
You could also make a chicken and cheese quasadia with a low carb wrap, chicken, cheese, sour cream and salsa...once again, read the labels first.
Chicken is my favorite...the possibilities are endless.
Any recipe that calls for bread crumbs can be happily substituted with the Atkins friendly ingredients listed under the breading topic in Low Carb Cooking Lessons. Crushed pork rinds work great and are induction friendly.
Chicken dipped in mayo and then dipped in crushed pork rinds (I add garlic powder, onion powder, parmesian cheese etc.) put on baking sheet and cook. Simple easy and DELICIOUS!

I mix up mild dijon mustard, a little bit of water (or lemon juice, or white wine if you're feeling daring) and a LOT of fresh ground black pepper. I mix it in a ziploc bag and throw my chicken breasts in it for the day. Take them out, but don't wipe off the marinade, roll them in whatever coating you choose to use, and bake at 350 for about 30-45 mins.
