    I finally found xanthan gum at my local Kroger

    What's everybody's favorite use for it? It is a bit pricey, and I don't want to waste it!

    You should try childrens trident it is made with splenda (.79cents) It is very good.

      Xanthan gum is not chewing gum, but a thickener for sauces, soups, gravy, pies, etc. Use it more or less like cornstarch.

        How interesting! How many carbs are there in xanthan gum? How does it react to heat if you were, say, using it to make a gravy?

            another use for xanthan gum

            Xanthan gum is also used as a binder/to lend chewiness to baked goods, especially when using gluten-free flours. So, since many of our recipes for lo-carb muffins, breads, etc. use soy flour--which is gluten-free-- or nut flours, you might add 1 tsp. to the recipe if it was coming out too crumbly/dry/not sticking together. My son is on a gluten-free/casein-free diet, and we use this in just about all of our cakes, cookies, breads, pancakes, etc. that we make for him. Because you don't use a lot of it, it lasts a LONG time. We are still using the package I bought 1 1/2 yrs ago--we keep it in the freezer in an airtight container to keep it fresh. Guar gum is used much the same way and is a fiber so adds to your fiber count.
