  • Pickled Sausages

    Hiya,

    Does anyone know anything about how to make pickled sausages similar to those you can buy at Wawa or other convenience stores/gas stations ? (Such as the Red Hot Firecracker, Tiajuana Mama, etc).

    What type of sausages should I buy to pickle, what spices do I need to put in with the vinegar, and how long do I leave them before they are ready? I am assuming I would be doing a refridgerated job as opposed to a real pickle setup, as I don't have access to industrial preservatives or one of those big things that sterilizes and vacuum seals jars.

    Also any recipes for great pickled eggs would be appreciated.

    Any standard pickling mix is fine; just add the fully cooked product and let it sit. For a stronger flavor, boil the pickling mix and add the cooked sausages (or boiled eggs) before it cools.

    Vinegar, spices like dill, coriander, fennel and onions, salt and a sweetener (Splenda works fine) in varying proportions are what make up a pickling mix. Look on the Web for recipes and adjust to your own taste.
