    :grimble Hi, dh just sent me a cuisinart icecream machine, the kind that you put the container in the freezer, and i need some recipes for icecream or deserts that i can make in it. I am doing this woe in Jordan so i need simple ones, i dont have much available to me here besides heavy cream, splenda (in the packs) cocoa, vanilla, strawberrys, no DaVinci's syrups or any of that stuff. No half and half either. No low carb products. :grimble

    Can you give me any good recipes.??

    Heres one recipe for you.
    Fresh Peach Ice Cream
    2 cups peaches -- ripe finely chopped
    1 cup splenda
    2 tsp fresh lemon juice
    2 lg eggs
    2 cups whipping cream
    1 cup half and half

    The best way to capture the elusive flavor of summertime. Ben and Jerry prefer small peaches because they have more flavor and less water than the larger ones. Combine the peaches, 1/2 cup of the splenda, and the lemon juice in a bowl. Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes. Remove the peaches from the refrigerator and drain the juice into another bowl.

    Return the peaches to the refrigerator. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the remaining 3/4 cup splenda, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend.

    Add the peach juice and blend. Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions. After the ice cream stiffens (about 2 minutes before if is done) add the peaches, then continue freezing until the ice cream is ready. Makes 1 generous quart.

    Its got 8 carbs per serving.
    And you know what I thinking, If you have trouble getting the 1/2 and 1/2, I bet you could use yogurt. I know your on OWL so it wouldn't add a lot more carbs to it. If you try it let me know. I don't have an Ice Cream maker, but would love to get one.
    And also you could probably use any fresh fruit/berry to this recipe. How about strawberry/peach or apricot or even raspberry

      what exactly is half and half? Half cream and half milk? wonder if i used half heavy cream and half water if it would work or substitute some regular milk for the other half? If i have the splenda packs only, how many do you think i should use?? I dont have the bulk splenda. :grimble

        instead of using half milk and half cream
        I would use 3/4 full cream mixed with 1/4 water. Or full cream..It will save you carbs and I imagine it would be richer and maybe even better

          Hi blue. I have the Cuisinart Ice Cram Maker too. REad the instruction booklet that came with the machine. It has recipes in it. You can convert the egg-based one easily to low carb by substituting a mix of half cream and half water for the milk, and using an approved sweetener (like saccharin or Splenda) for the sugar.

            I can't answer your question on Splenda. You may just have to taste test it yourself.

              You can use straight heavy cream, that's what I do. Makes for a very rich ice cream. For lower fat add water or milk (milk will add some lactose, milk sugar).

              Half and half is half cream and half milk.

              As far as the sweetener goes, put the sweetener into the liquid until it tastes right to you and then dump it in the freezer.

              Try this ---

              2 cups heavy cream
              1/8 tsp salt
              2 eggs
              1 tsp Vanilla (or to taste)
              Sweetener to taste

              I don't know what the situation is with raw eggs there, some people in the US worry about salmonella. If it's a problem for you then heat the mixture to at least 160 degrees, this will kill any salmonella that might be in the eggs. Make sure to let it cool all the way before you put it into the freezer. Use an ice bath or put it in the fridge.
