The easiest way to prepare large sea scallops is to fry them. Rinse them off and dry them off well. Heat oil in a skillet. Then add the scallops a few at a time. Cook them on each side until they are golden brown. Remove from pan, salt and pepper them.
If you don't want to bother with frying them. Go to the Seafood subsection of this board and look for a recipe called Spicy Garlic Shrimp. Substitute the scallops for the shrimp in this recipe and follow the instructions. Of course, you'll have to adjust the carb count.
