  • MINPIN needs our help!

    Minpin is having a cookout w/ hotdogs and hamburgers and needs to know of a tried and true induction friendly side dish that she can prepare so that she has something to go w/ her meats that the other folks at the party that are not on Atkins would enjoy too!

    What is everyone's favorite side dish? ( remember induction friendly!)

    Coleslaw: Just shred cabbage, add some onions if you want. Mix together mayo, celery seed, a tablespoon or so of mustard (like Dijon or a spicy brown mustard), a tablespoon or two of lemon juice. Combine half of that with the cabbage. Cover and refrigerate overnight. The next morning, drain away the watery dressing and add the remaining dressing. Toss and serve.

    Cabbage-Cilantro (or Parsley) salad: Shred 1 head of cabbage. Coarsely chop 1 cup (or less) of cilantro or parsley. In another bowl, combine 3 tablespoons cider vinegar or lemon juice, salt and pepper to taste, and the artificial sweetener equivalent to 2 tablespoons of sugar. Toss this dressing with the veggies and serve.

    Roasted Curried Cauliflower: Cut the florets off a head of cauliflower. Toss with some oil and spread on a sheet pan or baking dish. Roast in oven at 375 degrees for about 30-35 minutes. Stir the cauliflower occasionally so that it browns evenly. Remove from oven. Combine sour cream with an equal amount of mayo. Add a teaspoon of curry powder and a tablespoon of lemon juice (if you like alittle tartness). Toss with the cauliflower. Cover and refrigerate. You can add some thinly sliced sweet onion to the salad as well.

    Sweet and sour cucumber salad: Peel and remove the seeds from a few cucumbers. Thinly slice them. Thinly slice a sweet onion. In a bowl, make a 3:1 vinegar to water mixture. Add salt and enough artificial sweetener until you have a pleasingly sweet and sour taste. Add the onion and let it soak for about 10 minutes. Then add the cucumbers and toss. Cover and refrigerate.
