  • EASY Crockpot ideas please...

    Hello there! I just bought myself a small crockpot and need help with low carb recipes. I am not an experienced cook so I need an EASY recipe for crockpot. Beef or chicken preferably and any veggies.

    pepperachini (sp?) beef

    I get a beef roast, nothing fancy. chuck it in. pour 1 cup of pepperachini's in including the pepper juice, no water. put the lid on and walk away for 5-6 hours. sooo simple, soooo good! Not too spicy, but you can taste a zip.

      Do you leave on low? how do you know its done?

        I do pot roast like this.

        1 chuck roast (I usually do about a 3-4 pounder)
        2 large cans of tomatos
        1 green pepper cut into chunks
        1 large onion cut into chunks
        1 pkg of fresh whole mushrooms
        2 bay leafs
        2 garlic cloves chopped
        2 beef boullion cubes
        salt and pepper
        butter

        I take the roast and salt and pepper it generously on both sides. Brown it in a skillet with some butter, on all sides to seal in the juices.

        While that is browning I put 1 can of the tomatos, the boullion, garlic, bay leafs and garlic in the crock pot on low.

        When the meat is browned on all sides I place it in the crockpot. I put a little bit of water into the skillet and scrape up the little bits of brown that were left from browning the meat, then pour that in the crockpot. Then I add all remaining ingredients and put the lid on. That's it!

        I do this before I go to work in the morning and when I come home its perfect! The meat should fall apart easily with a fork, no knife required!

        Sometimes I add chunks of zuccini and or yellow squash for about the last hour of cooking time. I also add a bag of baby carrots if your carb count will allow carrots, if not they are easy to pick out, but I add them in the morning w/ everthing else cause they take a while to cook on low.

        This is one of John's favorite meals!

          HI there, well one easy quick thing i do is..(for a small crockpot-its jsut me)
          a can of chicken broth, some broccoli, and cabage, or califlower, celery, and i put it in at 1 pm and when i get home at 5 its done, then i add some cheese,
          you can add mean and put it in at 8 am and then at 12 or so add hte veggies so their not too done,
          - also tomoatoes, h.b.meat balls, beef broth
          sorryy thats all i have for now
