Since I have the surplus of eggs here, due to my hens a-laying and my neighbor's hens a-laying, I have created a pickled egg recipe for LC quick snacks. But I'm always looking for something tastier. I know, I know, I'm never satisfied..typical woman!
Here's my recipe
About 24 eggs hard boiled and peeled
2 Cans of beets, I drain and save the juice and toss the beets
Whole cloves to taste, I like about 10 - I love how these smell
2 Cups of vinegar - I used white
1 onion chopped
Splenda to taste
1 Tsp of salt - I like and use kosher
I put the peeled eggs in a big 2 quart jar and add everything else. It really needs to sit for at least 24 hours, but I can only make to 12 hours. At least once a day I pick up the jar, turn it, making sure all eggs in the pickling process get fair treatment, and chant...I LOVE EGGS.
Now about the beet juice, my understanding is as long as you don't drink the stuff you are good to go regarding carb count. Its used mainly for color. Does this sound right? If not, please tell me.
