    Hi All,
    I saw a post yesterday (somewhere?!?) that talked about Grecian Chicken and Steak. Does anyone have the recipe for the seasons? I love greek and would love to try.

    "From ancient times to the modern 20th century, the cooking of Greece has relied on the same basic foods and flavors. There is an essential quartet of ingredients no Greek kitchen is ever without: oregano, garlic, lemon juice and olive oil. A Greek cook will happily dress, drizzle or rub nearly every food from salads to beef to seafood with these aromatic and flavorful seasonings before cooking.

    Cinnamon, cloves, mint and dill are also used extensively in Greek preparations. It is the creative way in which these ingredients are combined and used with others that make Greek cuisine so varied, bold and tasty. Garithes Youvetsi, the one-dish meal of shrimp baked with feta cheese, is a fine example of Greek largesse with spices, yet note how the stronger flavors of the dish are lightly tempered by honey and tomatoes, two other unmistakable Greek touches.

    Probably the most popular Greek food in America is Souvlaki--skewers of lamb or beef cubes and vegetables that are grilled or spit-roasted. These are typically prepared with the quartet of ingredients mentioned above, then enhanced with aromatic bay leaf and onion. The Aegean’s bounty of fish, from eel to sardines, is grilled, baked, pan-roasted and stewed with these aromatics as well, often adding fragrant dill and parsley to the finished dish.

    How else do the Greeks use spices and herbs? It is no surprise that sweets, like the classic butter cookies called Kourabiedes, rely on cinnamon and cloves for authenticity. Greece’s traditional stifados, or stews, such as Beef Stew with Cinnamon and Mint, also incorporate these delicate flavors in addition to oregano, onions and black pepper."
