  • Green Bean Casserole

    Does anyone have a recipe for a Green Bean Casserole (without other vegetables in it?) Prior to Atkins, I used to make it with Cream of Mushroom soup. I read somewhere that those little canned fried onion toppers are low carb, so at least I can still put those on top. =) Any recipe suggestions would be great.

    I found a recipe that I used for Thanksgiving. You combine green beans with alfredo sauce and fresh sliced mushrooms. The add the fried onions, and cook till bubbly at 350.

            Store bought alfredo sauce is very high in carbs. You can buy a low carb version, or make your own.

            Melt butter in a pan and stir in an equal amount of Atkins bake mix or another low carb flour substitute. (WPI won't work here and neither does whey powder). When the thick paste is well browned in the butter (3-5 minutes on low heat, constantly stirring) slowly add in cream or low carb milk substitute. You may choose to thicken with "flax goop", psyllium powder or ThickenThin NotStarch. A FAQ on thickening is here: http://www.atkinsdietbulletinboard.c...pic.php?t=5895

            When this sauce is thickened and bubbling slightly (it can take awhile for the thickening to have full effect) you may add shredded cheese and turn off the heat. Do not overcook the sauce once the cheese has been added.

                Hi Ya'll

                Could you not use cream cheese, cream and canned mushrooms, instead of the mushroom soup?????

                Also i have the Atkins Essentials book, along with the DANDR, and this recipe was in it, i tried it, it was AWESOMEEEEEEEEEEEEEEE!!!!!!!!!!!!!

                Sesame Green Beans

                Prep time: 15 min
                Cook Time: 7 min
                Marinating Time: 20 min
                6 servings

                1 1/2 lb green beans
                3 T rice vinegar( called for rice wine vinegar, my bottle just says rice Vinegar)
                3 T Low-Sodium soy sauce
                2 T Black sesame seeds ( didnt have any, left this out)
                1 t sesame oil

                1. In large pot of boling salted water cook green beans about 7 min, until crisp tender. Drain beans in a colander and transfer to a zip lock bag or bowl. Toss beans with vinegar, soy, and seeds until evenly coated. Let marinate for 20 min, turning occasionally. 2. Drain and toss beans with sesame oil. Serve at room temperature.

                Per serving: carb: 9 grams, fiber 4 grams, Net carbs: 5, protein 2.5 grams, fat: 2.5 grams, calories 62

                  The new Carb Options Alfredo Sauce is wonderful, and only has 2 net carbs per serving (of course, there are six servings in a jar, but for this type of usage you wouldn't need nearly a whole jar!).
