  • Need a simple pumpkin pie (not canned) recipe

    Doing this woe in Jordan , and i need a very simple (no soy flour or atkins bakemix, or things like that.) recipe for pumpkin pie, the real kind made from a real pumpkin, i dont have the canned available to me here or any of the other low carb goodies to help make it, so i need just a simple basic recipe if anyone knows, and btw i would be using splenda packets, thats all i have from the low carb products from the states. :grimble

    Steam pumpkin cubes (skinned and de-seeded) in a small amount of water until soft. Mash or blend until smooth and sweeten to taste with Splenda. For each cup of pumpkin puree, beat in one egg and 2 tablespoons of cream cheese.

    You can make the crust from ground walnuts, cinnamon and butter. Mix softened butter and some water with the finely ground nuts until you have a loose, crumbly "dough". Press the nuts into a pie pan and cover carefully with the pumpkin mix. Bake gently at 325 until firm.

      I also don't get canned pumkin here..
      I use this method and make great pumpkin pies (I use almonds instead of walnuts) but everything else is the same.
      After you have made up your pumpkin then just follow any basic pumpkin pie recipe substituting cream/water for milk.
      btw, I also use mashed up pumkin with sweetner and cinamon and "fry" it in a little butter in a frying pan....for a quick treat..
