But I use Newman's Italian Dressing a lot - good taste very low carb
Atkins didn't say 'Calories don't count',
    he said, 'Don't count calories.'

      My recipe is this...

      2 teaspoons Dijon mustard
      1 pinch salt
      1 pinch black pepper
1 teaspoon artificial sweetener or to taste
      1/4 cup vinegar
      3/4 cup oil

Put everything into a glass jar with a tight fitting lid. Close the jar and shake until all the ingredients are well combined. Leftovers can be stored in the refrigerator.

You can change the flavor of the dressing by adding dried herbs and spices, such as garlic powder, onion powder, Italian herbs, curry powder, chili powder, etc.

Mine is really simple olive oil + vinegar! I don't need anything else in it.
