      Faux Cream of Wheat

      Recipe by "nasus"

      Faux Cream of Wheat

      1/2 cup riccotta cheese
      4 tbs cream
      1 egg

      Mix and heat over med heat until grainy, then add a little vanilla, cinamon, and Splenda/stevia to taste.

        Curried Chicken with Cucumber

        I found this recipe in on of my "Atkins" recipe books.

        So good that I am making it again tonight for a friend not on Atkins



        2 chicken breasts (cubed)
        Half and Onion (Finely Chopped)
        2 Sticks of Celery (Chopped)
        1/2 Tsp Curry Powder
        1/2 Tsp Cinnamon
        4 Tablespoons Mayonaisse
        "A bit" of Cucumber.

        Cook the Chicken, and leave to cool.

        Mix The Mayo, onion, celery, cinnamon and curry powder. Toss in chicken and mix. Add Cucumber and Chill for 1 hour (approx) before eating.

        Occasionally I will add a little green pepper to add colour.

        It never ceases to amaze me of how easy and how effective this ***diet*** is!!




        I have since re-gained a bit of weight, but that is soon to be coming off again!

          These are my super easy lunch salads served on a bed of romaine:

          Tuna Salad

          2 cans all white albacore tuna drained well
          Hellmans Real Mayo
          Dill Pickle Relish
          Salt
          Pepper

          Mix amounts to the consistency you like. You can also add a little chopped celery or a chopped hard boiled egg if you like.

          Chicken Salad
          Same as above recipe, except use shredded cooked chicken.

          Salmon Salad
          Same as above recipe, except use baked salmon crushed and also sprinkle in some dried dill.

            Tuna Salad~

            (All ingredients are to "taste" depending on what you like)

            Tuna, drained and flaked
            Mayo
            Celery
            Garlic Powder (I use lots)
            Onion Powder
            Small amount vinegar
            Small amount mustard
            Pepper (the more the better)

            *I use the vinegar/mustard in place of salt
            All for one...And one for all!!!
