    Hi Everyone :laughing

    My birthday is on the 25th of January and my husband wants to bake me a low carb chocolate cake. Does anyone have any ideas for a cake or frosting?
    I’m no longer in induction, my doctor has taken me out off of that and put me in OWL.

    Help is needed please. Thanks

      Sorry I didn't get to this sooner. I hope you found a good recipe by searching the Net, or in our recipe database.

      3 Minute Chocolate Cake

      1/4 cup almond flour (1 ounce)
      1 tablespoon unsweetened cocoa
      1/4 teaspoon baking powder
      3 tablespoons plus 1 teaspoon granulated Splenda
      2 tablespoons butter, melted
      1 tablespoon water
      1 egg
      3 drops almond extract (optional) (could also use 3 drops of peppermint extract)

      Mix the almond flour, cocoa, baking powder and Splenda in a 2-cup glass measuring cup. Stir in the butter, water, egg and extract. Mix well with a spoon or fork. Scrape batter down evenly with a rubber spatula. Pour into a microwaveable glass bowl and cover with plastic wrap, cutting a small slit in center to vent. Microwave on HIGH 1 minute 20 seconds. Cool slightly and serve warm topped with heavy whipping cream.

      Makes 2 servings (which is good, because if there was more, you'd eat it all!!)


      "Pound Cake"

      Ingredients:
      1 stick butter softened
      4 oz. creamcheese softened
      1 cup Splenda ( I use a mix of sugar subs)
      5 eggs - at room temperature
      2 cups almond flour
      1 teaspoon baking powder
      1 teaspoon lemon extract
      1 teaspoon vanilla extract


      Beat butter and Splenda well. Add eggs and all extracts and beat really well.......make sure your wet mix is really fluffy before you add the dry. Add all dry to wet. Pour into greased 9"-10" Springform pan (or 9" round cake pan) and bake at 350°F for 60 minutes.
