  • Cheese Sauce

    Does anyone have a recipe for a cheese sauce that they can post?
    Start: 190.5 Now: 173.5 Goal: 135.0

    Looking forward to my wedding in Cuba next January!!! I have lost 17.0 pounds since January 5th!!!

    Sorry I don't know any, but I like to melt some brick cheese in the microwave or on the stove top in a pot and just make sauce like that.... maybe throw in a tiny bit of cream to make it more liquidy?

      My hubby made a creamy, cheesy white sauce for my chicken last night.

      I saw him use butter and heavy cream. I think I saw him melt in some provolone and parmesan. He added some herbs and pepper. I don't know if he measured anything or not (probably not) Anyway, it was wonderful.

        I wanted a sauce to pour over broccoli and cauliflower or to use as a fondue when guests come over

          ALFREDO SAUCE:

          1 stick real butter
          1 cup heavy cream
          1 cup grated parmesan
          salt and white pepper to taste

          melt butter over med-high heat in a small saucepan. add cream and heat through until very hot but not boiling. add grated cheese and stir until it is all melted and incorporated. season.

          i used to make this over fettucini noodles with strips of garlic-butter grilled chicken, but now i just make it over the chicken. you could put it on any meat or seafood and it would be good. i'm sure you could experiment with other cheeses, but i know it works with the parmesan, and my family likes the alfredo sauce.

            There is a new low carb cheese sauce on the market by the makers of Ragu that is wonderful! It has 2 net carbs per serving and it tastes great. The name is Carb Options and there is a whole new line of products, primarily sauces. I got mine at Lowes Foods, but I've heard that Kroger has the line as well. Here is a link to their website:

              I just boil about a cup of cream (reduce it a bit by boiling), then add 1/2 cup of whatever (grated) cheese I want:
              •cheddar
              •swiss
              •blue cheese (great on filet mignon!)
              •parmesan

                An electric Fondue pot is a great tool to have around to prepare and maintain the consistency of any cheese sauce. You can pick them up at Bed Bath and Beyond for not too much.

                The basic ingredients for any cheese sauce will simply be cheese, cream, and spices. You can vary the ratio of cream to sauce based on if you would rather have a very creamy, almost alfredo like sauce, or more to the cheese side to give you a more cheese dip type of consistency.

                I find that mixing a mild cheese such as Mozerella or a mild Cheddar with a strong cheese such as Gorganzola can give a very full flavor while at the same time keeping costs down and still having that nice cheesy texture. A cheese sauce is also typcially a dish where I forgoe my 'peppers go into everything!' attitude and instead just season with the basics, a pinch of salt, pepper to taste, and depending on the application possibly some garlic and a little mustard powder.
