Does anyone have any good tuna casseroles? Something good and cheesy maybe. I love tuna but I'm sick of just tuna fish and mayo. Thanks everyone.

I haven't attempted this, but you got me thinking.
I have said this a hundred times before...I love spaghetti squash. Cook some of that up, make a cheese sauce, mix it all with the tuna...and whatever else you like and voila...tuna cassarole.
I need to try this. I also love tuna!Originally Started May 29, 2003 and lost 96 pounds. Fell off the wagon and gained over 100 pounds back. DON'T LET THIS HAPPEN TO YOU!

If you do a search, you'll find a recipe for Tuna Melt. If you want to make that in larger quantities, I think it will be doable.

Total recipe= 25.3 g. carbohydrates; 8.5 g. fiber
Makes 2 large servings @ 8.4 g. effective carbs each
1/2 medium onion, finely diced
1 rib celery, finely diced
1 tsp. butter
1/4 cup heavy cream
1 egg
3 oz. cream cheese, cut in small pieces
salt, pepper and garlic powder to taste
2 cans (6 oz. each) tuna, drained of liquid
1 can (14.5 oz.) French-cut green beans, drained
1/4 cup pork rind crumbs
2 Tbsp. grated Parmesan cheese
In a large skillet, over medium heat, saute onion and celery
in butter until vegetables are crisp-tender.
Meanwhile, beat cream, egg and seasonings together
thoroughly. Pour cream mixture into skillet with vegetables, and add
cream cheese. Heat, stirring, until cream cheese is melted into cream
sauce, and the mixture thickens and begins to bubble.
Add tuna and green beans. Stir until well-mixed.
Pour mixture into a lightly greased casserole.
Sprinkle pork rind crumbs and Parmesan cheese over the
top.
Bake at 350 degrees for about 30 minutes until heated
through and topping has browned slightly.

12 ounces canned tuna in water -- drained (1 large or 2 small
cans)
1 pound frozen broccoli flowerets -- or cauliflower or
broccoli/cauliflower blend
1 1/3 cups Ragu Cheese Creations Double Cheddar Sauce --
(about
3/4 of a jar)
1/2 cup crushed pork rinds -- or finely chopped nuts
Preheat oven to 350° and lightly spray 8x8 casserole dish.
Mix vegetables and cheese sauce together, then add in the tuna, not breaking
it up too much, just enough to disperse, and pour into a casserole dish.
Top with crushed pork rind crumbs or nuts. Bake for about 30 minutes until
heated through and bubbly.
