  • Cheese Burger Quiche

Hi does anyone have a recipe.

    a basic quiche base is:

    4 large eggs
    1 1/2 C. heavy cream
    1/2 tsp. salt
    1/4 tsp. pepper
1 C. grated hard cheese (your choice)

you can add about 1 - 1 1/4 C. total of additional ingredients for your "flavor". (too much and it will crumble or be more casserole-y rather than quiche-y.)

for cheeseburger, i'd recommend cheddar cheese, browned ground beef and maybe a chopped roma tomato. some crumbled, cooked bacon sprinkled on top would be nice too.

for other varieties, you can use diced ham, any diced green veggie that cooks relatively quickly and holds it's shape (broccoli, asparagus, zucchini, etc.), shrimp, crab, bacon, green onion, or a few cloves of sauteed garlic. pre-cook any meats, and blanch and drain veggies until crisp-tender and still bright, except for tomatoes and green onions. well, don't use all of that at once, but try some combinations that appeal to you.

swiss cheese is wonderful in quiche, and combining cheeses is also a nice way to change or adjust the flavor for different ingredients.

bake in a buttered glass pie pan at 400 for about 30 minutes, or until a knife inserted into the middle comes out clean. my family likes when i divide the batter up into individual ramekins and make mini-quiches, too! cook the same, but watch them so that they don't get over-done. small ramekins will cook faster.

quiche doesn't need a crust, luckily for Atkin's WOE! this works just fine without one.
