  • tofu recipes?

    i would love some tofu recipes if any of you have recommendations. hubby and i went grocery shopping yesterday and i bought some of the extra firm tofu. i'm a good cook, and we are both adventurous eaters, but i have no idea what to do with the tofu... we have a great Chinese restaurant less than 5 mins from my house, so we never had reason to buy it to make homemade dishes with it before, lol. i didn't get the soft kind, as neither of us is big on smoothies or shakes, but i would love to try some dishes with tofu that are allowed on the diet.

    no more take-out hot and sour soup! :crybaby

    Tofu is very good in soups and in meat and vegetable stir fries. Pick your recipe and add your tofu! It is a fairly bland substance, so it absorbs other flavors very well.

      Hi

      Please dont cry.......heres a Homemade Hot and sour soup recipe:

      Hot and Sour Soup

      1 cup sliced mushrooms
      1/2 cup shredded pork or chicken
      1/2 cup bamboo shoots
      1 egg (beaten)
      tofu - i did not right down how much tofu, as i left it out????????
      4 cups chicken stock
      2 T vinegar
      1 T soy sauce
      1/4 t salt
      1/4 t pepper
      1/4 t sesame oil
      1 minced green onion(garnish)

      Simmer till all veggies are done. Bring to a boil, add beaten egg slowly into soup. Garnish with Green onions, Serve

      I added 1 cup shredded cabbage, a no carb boullion cube (knorr) and red pepper flakes to make it HOT. I omited the bambo shoots, and tofu. Iffin i did the math right one serving = 3.5 carbs for the soup i made, you will need to make adjustments for whatever you add that i didnt.

      You could also add water chestnuts, and/or bean sprouts, the more you add the more stock i would add.

          When useing tofu, heres what a lot of people do to give it a better texture (or at least most the vegetarians I know and myself!)

          1 take tofu out of package and put in a ziploc bag and freeze it.
          2. When you want to use it, take it out about 2 hours before hand and place it in a towel, cover the top with the towel and set a plate on top.. add something heavy to the top plate.. like a book or a rock).

          This squeezes out a lot of the water and gives it a nicer texture.

          I marinade my tofu overnight either in terriyaki sauce or in a italian garlic marinade.

          If I am making stir fry, it's the terriyaki sauce. I toss the tofu in the wok with a little bit of oil and let it cook for a few minutes before tossing in the stir fry veggies. Cook until the veggies are done. Mmmm

          Or, for an easy meatless spaghetti sauce... heat a skillet with olive oil and minced garlic, chop your tofu into small bites. Sautee until the tofu is golden brown. Add jar of your favorite spaghetti sauce (I've been using the carb options one lately!) let simmer for a few minutes. Toss in some mushrooms, bell pepper and onion, let simmer of ra few more minutes. Yummy!

            Make smoothies

            I like to make a smoothie out of it. Use tofu, Atkins syrup any flavor, Slenda to taste, 4 cubes of ice, half a cup of water and half a cup of heavy cream.

            This is a meal replacement if dont want to eat or make something because you are not that hungry.

              I've shaved my block into macaroni size pieces and then added it to a homemade cheese sauce (cream and cheese). Let it set a few minutes to soak up some of the sauce before eating. If it get cold just zap it in the microwave. :nod Tasted a bit like mac&cheese.
