  • Brocoli Salad?

    Life kinda sucks after Grandma (or Great Aunt or Uncle so and so) passes away and the family realizes that beloved dishes were not put down on paper and even if they were, consist of "about"s and "pinches" and "until it looks right"s.....

    I remember a brocoli something or other. It used fresh brocoli pieces, bacon and some sort of nut, maybe pecan or walnut. I think it had a mayo-type sauce over it and you were suppose to let it sit in the fridge for a day or so before you served it (kind of like 7 layer salad).

    Does this sound familuar to anyone? Would they happen to have a simular recipe? I know the 'orignal' recipe can't be too atkins freindly because I remember it being really sweet (and salty, but I'm sure that was from the bacon).

    It's Delish! Just type in Broccoli salad on most recipes sites to get the recipe. It's a pot luck staple, I take it all the time so I know I will have something to eat. It can be very Atkins friendly, just use Splenda and mayo instead of miracle whip. (It has Bacon, sunflower seeds, mayo and cider vinager, look for that in the recipes)

          I make broccoli and cauliflower salad (equal amounts) combine 4-6 slices of bacon, shredded cheese, 1 cup of Hellman's, 2 tbsp of vinegar and 1/8 or 1/4 cup of splenda. Try 1/8 first and then add if necessary. Mix well, let sit in fridge for a few hours or overnight. Delish!
