zucchini bread??

I've seen a recipe floating around for flax bread and muffins...

do you think zucchini could be added at all? Would it be to mushy?

Just an idea I have. I used to LOVE my mom's zucchini bread!

I don't see why some _couldn't_ be added, sounds like an interesting idea. I used to make a killer Pistachio Zuchiwi cake, but alas, that is not Atkins friendly at any stage .

I'd recommend messing around and seeing what you come up with, best way to learn is to experiment, although I also remember Zuchinni bread fondly enough that I might play around with that one myself the next time I get my hands on a Zuchini...
